創始人 阿宏 是位硬頸的客家人，年輕時期就知道一輩子做工是出不了頭的，於是決定做生意當『頭家』，開啟了已有20幾年的夜市人生。起初煙燻滷味因阿宏沒經驗，先與他人批發販售，但是長期下來發現品質不宜掌控，進貨來的鴨腳不是太大就是太小，不然就是皮肉模糊不完整，在百般無奈下，阿宏決定親自研發製作。
